● Two ways in
Druivensap is built around the moments people actually open a bottle. Tell us what you're cooking, or which restaurant's list you're chasing — we'll come back with a small, considered cart.
01 · Tonight
Tell us the courses, the guests, how thirsty everyone is. We work out the bottles, the count, and whether you should pull a magnum.

● The house · how we drink
Druivensap doesn't believe in wine clubs that ship without asking. We believe in a small list, a careful kitchen, and the bottle that arrives on a Tuesday because someone wrote to ask.
A note from Joris, who buys
“I import what I'd open on a Sunday — for my mother, for a friend, for the table I'm sitting at. Then I tell you what it's like. That's the whole shop.”

The cellar, 14°C.
● Live
A red can be served cool.
Most of the time, it should be. We tell you when on the bottle's note.
Magnums are for nights, not status.
Same wine, slower oxidation, more time at the table. We stock fourteen.
Vintage means weather, not magic.
We taste through bad years. Sometimes the lesser vintage is the better dinner.
The third glass is the honest one.
First glass is the wine making its case. Third is the wine being itself.
Pair to the cook, not the recipe.
If you like a richer red, pour one. The fish will be fine.
A small list ages best.
412 labels, total. We'd rather know each one than chase the catalogue.
● As poured at…
★★★ · est. 1993 · 1800 bottles
Zwolle, Netherlands · Jonnie & Thérèse Boer
A library of fermentation, fire and the Dutch landscape. The wine list is famously deep and unafraid of small growers.

★ · est. 2024 · 600 bottles
Amsterdam, Netherlands · The kitchen at Die Port van Cleve
A Parisian bouillon transposed onto the Nieuwezijds Voorburgwal — French comfort food with Amsterdam bravoure.

★★★ · est. 2003 · 2400 bottles
Copenhagen, Denmark · René Redzepi
A Nordic fermentation kitchen. The list leans low-intervention, skin-contact and orange wine.

★★ · est. 2014 · 1100 bottles
Gardone Riviera, Italy · Riccardo & Giancarlo Camanini
Lake Garda terrace, an Italian list that quietly hides Champagne and Jura.

★ · est. 2001 · 320 bottles
Amsterdam, Netherlands · Jos Timmer
An Amsterdam greenhouse turned dining room. The menu starts in the garden behind it — the wine list runs short, sharp and biodynamic.

★ · est. 2011 · 700 bottles
Paris, France · Bertrand Grébaut
The Paris bistronomy reference. The natural wine list reads like a who's-who of the Loire and Jura.

● The invitation

Two minutes with the planner. Three bottles by Saturday. The kitchen will be quietly impressed.
